Salut! Restaurant welcomes new Head Chef, Fabien Gailly

Fabien brings a wealth of experience from Michelin starred restaurants around the world.


Head chef Fabien Gailly travelled all over the world and moves to London to bring Salut! Restaurant guests a new experience. He grew up in the French Alps and has trained in one of the prestigious culinary schools Lycee Hotelier Lesdiguieres and obtained his CAP Cuisine and CAP Service in 2002.

Fabien worked in many Michelin starred restaurants including Caprice in the Four Seasons Hong Kong (three stars),Le Cheval Blanc, Courchevel (two stars),Chateau de La Chevre d’Or (two stars),Hotel La Reserve De Beaulieu Mer restaurant (two stars), Hotel Les Barmes de l’Ours Val d'Isere (one star).

Restless, obcessive and passionate. Fabien expresses his best abilities in his dishes, definitely a must try!
